Made in the same style year-to-year with a “reserve perpetuelle” of wine stored in qvevri, Nino has a very classic-elsewhere quality with an undeniable beauty that’s an easily-learnt (and taught!) appreciation. Fermented with wild yeasts in 70-30 old French oak and qvevri, the wine was bottled and rested for 15 months with minimal sulphur and no fining or filtration. Fresh and clear-eyed like a spotless sky with notes of pine nut, bruised apple, cornbread, tree resin and a creamy whiff of savoury eggy bread like the extra-Georgian speciality, khachapuri. There’s even a stylistic nod in that fresh, salty-savoury crispness to Nova Scotia’s Benjamin Bridge, where winemaker Bastien Warskotte worked at for some time, plus a literal nod to Bastien’s wife, Nino. Hard to describe but easy to enjoy, this dry, unfortified white wine from Ramiro Ibáñez is a deeply satisfying joy made out of Palomino, the grape typically used to make sherry, the famed fortified wine from Jerez. Here, Ibáñez is making it in the everyday style enjoyed by Jerezanos of the 19th century, embracing the savoury richness only Palomino can offer in a fresh, lower-alcohol package. Farmed from several plots of 80 to 90 year old Palomino vines, this was fermented and aged in old Manzanilla barrels for less than a year AKA meant for easy drinkin’ but especially with food. Primary fermentation in clay amphora with the second fermentation in bottle for tight, persistent bubbles. Wafting RIPE strawberries, rose hip tea, raspberries blossoms, rhubarb compote, chestnut crunch \u0026amp; a mineral spire. One of our favourite producers ever, period. Dido and Jurriaan worked for wineries around the world but it was meeting natural wine trailblazer Joan Ramon Escoda that really changed the way they made wine, focusing on growing the best fruit to make the best wine, made sound without sulphites. Mostly Cab Franc with 10% Xarel-lo, this lightweight red-white blend was vinified like a white with a short, 3-day wild ferment on the skins and a few months in tank and barrel before being bottled without fining, filtering or sulphur. Juicy and utterly drinkable with freshness at the forefront – juicy, tart wildberry, chewy plum, capsicum, white pepper, wet cobblestone, a touch of green herbs \u0026amp; a lean, acid-driven finish. Made from Hárslevelü, one of the three main grapes in Tokaji, the famous Hungarian sweet wine, this rarely-seen, single-varietal white done completely dry vibes to its own vibrations, wild fermented for 5 days on the skins and aged for 5 months in old Burgundian barrels, bottled without fining, filtration or sulphur. Alex Foillard may be son to Beaujolais legend Jean Foillard – one of the Gang of Four who essentially launched the natural wine movement – but this polished and sophisticated Gamay speaks volumes for itself. Farmed from 70-year-old vines, grapes undergo a whole-cluster wild ferment and are aged in concrete for 4-5 months, then bottled unfined and unfiltered. You think you know all about Gewürtztraminer, the oily, perfumed grape that can veer off-course into sickly territory? Think again! From Mac Forbes’ ‘Experimental Batch’ series, this fragrant flower drinks quite linear and fresh, an exercise in restraint that was bottled in early spring to rein in some of that aromatic development with no malolactic conversion. Fermented in concrete and small old oak before being aged in old ‘hogshead’ barrels, this rust-tinged white sheds a whole new light on luscious, sweet-scented whites. Jasmine flower, rosewater and a squeeze of lemon with green apple zest and a zippy, refreshing finish.
