We always scoop up a few bottles and not just because it is called Brut Tendre -the nickname of a future crush who is a bro on the outside, but a sweet peach (apple?) 🍑🍎🍏on the inside: writing us love poetry, painting his feelings and respectfully admiring wild women (us!). It's like a "she's all that" reveal moment IN REVERSE! Because he will become less cool and then we'll be in love forever! (jk for a small amount of time). But back to the cider! Eric Bordelet makes the most delicious stuff. He was a sommelier in Paris before he returned to his family's property in Normandy to make cider. He has been a hero around the world ever since and is one of the reasons high quality cider production is popping up all over the world. 🌱
Normandy is a region in Northern France, west of Paris famous for its OG delicious ciders. This is not sweet pop cider from dessert apples in tall cans, but ethereal stuff from ancient apple varietals that taste horrible to eat, but add complexity and tension to blends. Eric wanted to bring the philosophy of biodynamic winemaking to cider. 🌙🌙🌙These are handpicked apples (up to 20 varieties) that are dehydrated for a few weeks (to intensify flavour!) before pressing and a natural fermentation. The Brut Tendre has a touch of balanced sweetness (#same), a ton of perfect savoury bitterness for ideal twang (#alsosame) and at 5.5% alcohol it is perfect for a sunny spring day/ new romance. ☀️💕🌱🌿Bruised peaches, stewed, overripe cantaloupe and the good funk that makes you feel cooler to be around and feels weirdly important for your body to be consuming. We don't often NOT drink wine, but when we do, we drink perfect cider like this! Bordelet calls this "sidre" the ancient spelling - a nod to the history of high quality ciders from this region for hundreds of years.
