A very special #lcboandu!! Because how in merlin’s name is this glorious gem of a natural wine available in our government controlled stores?! 😍 Meet Jauma’s Fairygarden. @Jaumawines is a small producer in McLaren Vale run by winemakers James Erskine and Mark Warner + viticulturalist Fiona Wood. 🌙 Normally McLaren Vale is all beefy, high alcohol Shiraz - think a well cooked steak with mushroom sauce at @thekegsteakhouse. Not bad! Just bigggggg and alcoholic and makes us sleepy/ bad company because we are sleeping. Lately though, a new wave of Australian winemakers have been making something else: cooler climate, lower alcohol wines, more unique varietals and less traditional expressions of the classics. The fairygarden is just that: a Shiraz-Grenache blend made by carbonic maceration, a technique that lifts and changes this classic pairing. 🍇✨ Carbonic maceration sounds fancy and complicated, but is in fact the most simple. Instead of crushing the grapes and allowing the fermentation to occur with constant contact with the grape skins (which give tannin, colour and mouthfeel), the winemaker leaves the grapes whole and allows fermentation to take place in each grape without any skin contact. This creates more fruit forward, higher acid, lighter coloured wines - this is how they make Beaujolais Nouveau so party-like!! ⚡️NOW U KNOW! 👍🔥😎 The fairygarden is all big foot candy bright red and bursting with crushed rockets, freeze dried raspberries and roses fresher than the ones featured here. 🙃 Crunchy red fruit on the palate, but firmly medium bodied in the most crushable way. If we were in a garden of fairies it does seem logical that the water fountains would dispense only this. 🌹 At $50ish a bottle it is a splurge, but amazing to have access to this quality of producer + interesting small production wine. It is normally only sold by the case, but it is on the shelf at the Australian LCBO at 65 Wicksteed!!! Make a road trip for this golden nugget plus delights from @brashhiggins@gentlefolkwine@ochotabarrels, Shobrook wines +. Google LCBO specialty stores for more country specific stores that stock insanely good things normally only found by the case. 😍⚡️
