By handling the manual labour themselves, the contact with their vines and soil allows them to stay in tune with the environment’s unstoppable fluctuation and better care for their prized land. From granitic soils, the 40 year-old pinot noir vines were picked by hand, de-stemmed and left for one week of maceration before eight months in stainless steel to keep the expression ringing true as a bell.
