Xarello, Penedes, Catalonia, Spain | Lively, like the littlest sibling who’s always cannonballing onto your bed in the morning, surprise! Time to wake up your eyeballs! Young, visionary winemaker Ferran Lacruz has been organically farming his 8ha of land, in the small village of Sant Marti Sarroca, since 2018. Made from 56 year old vines, grown on calcareous-limestone soils that punch an oceanic, minerality-shaped-hole straight through all of Ferran’s wines. Here, grapes are hand harvested at three different times as the individual bunches of fruit ripen. The first harvest (65%) is fermented in stainless steel, second harvest (25%) is macerated before fermentation, pressed to stainless steel for fermentation, then both are aged 3-4 moths in demijohn. The third harvest (10%) is fermented on the skins for 3 weeks, and then aged for 4 months in a 500 litre oak barrel. Like a bedside breakfast platter in heaven – white peach fritters, fresh shucked oysters, juiced orange grove, white lilac honey & salted Fuji apple slices. Enjoy with brunch because 11 am here is 5 pm in Spain & it just makes sense.

Carignan Blanc, Penedes, Catalonia, Spain | An orange wine for the noble at heart, rearing to go & capable of anything. New n’ shining winemaker Ferran Lacruz farms 8 hectares of organic and biodynamic vines in the small village of Sant Marti Sarroca in the heart of Penedès. The grapes are first destemmed and pressed to stainless steel tanks where they lay in contact with skins for two weeks. Manual punchdowns of the skins are then performed once or twice a day for two more weeks post-fermentation, for a grand total of 30 days skin contact – creating an ample mouthfeel, perfect for pairing with hefty meals. The wine is then transferred to 160 litre amphorae where it ages for five months to smooth out any rough edges. Light amber in colour with ample structure framing dried apricots, liquorice flowers, mandarin droplets, bloody apples, grapefruit pith confetti & rock-like petrified ocean wood. Drink with your most challenging of dishes, and test what this striking & gastronomic orange is capable of.

Xarello, Penedes, Catalonia, Spain | A lovely pet-nat, aka ancestral method sparkling wine that glitters like a pearl-adorned disco ball. Dreamer and Catalonia-born, natural winemaker Ferran Lacruz farms 8 hectares of organic and biodynamic vines in the small village of Sant Marti Sarroca. Working exclusively with local grapes and wild yeast in an effort to showcase what his land is capable of — in a region where most farmers sell their fruit to conventional winemaking operations forever to be lost to #bigblends. These Xa-rello grapes are pressed to stainless steel tanks for most of their fermentation then transferred to bottle just before fermentation is finished to create happy little bubbles. The wine is held in bottle and later disgorged (the process of removing sediment from the bottle by utilizing its own built up pressure) and is re-corked without sulphur. Balanced yellow tree fruits swing in fields of sourdough pastry, finger lime mineral water & honeysuckle. Drink while watching Pastry Chef Attempts with Claire Saffitz and contemplating how exciting life would be if you owned a dehydrator.

Xarello, Penedes, Catalonia, Spain | A lucky go-getter of a Xarello, destined for great things, and working tirelessly to get there. New & exciting winemaker Ferran Lacruz has been farming organically (and with biodynamic practices) with as little intervention as possible since 2018, trying to do justice to his beloved hometown grapes. A natural winery that wants to be out of any appellation of origin or regulation, so as to not have any barriers to his creativity or his grapes potential. Harvested from 49 year old vines grown on mineral rich, calcareous soils that bestow a pretty, oceanic air to the wine. Fermented with their skins in stainless steel for 3 weeks, Ferran takes care that the skins are always submerged so they do not oxygenate or extract too harsh of tannins into this delicate orange wine. Lively acid, like a bunny hopping around playing the lute alongside preserved lemons + their brine, tangerine slices, gravel knee scrape, pear popsicles & dried dragonfruit. Drink with mushroom fried rice, a runny egg and Interactions of Colour by Josef Albers.
