Pedro Ximenez, Verdil, Chardonnay & friends, Valencia, Spain | It’s no secret that we’re obsessed with dry table wines made out of sherry grapes, always savoury and complex in a crisp and clean package that we could happily drink forever! For centuries, Celler del Roure produced everything from grains to olive oil but only began making wine in ’95 with the dozens of centuries-old amphora that were simply lying around, waiting to be used. Pedro Ximenez (a grape typically made into a dark, sweet sherry) and other regional grapes are raised in amphora for six months, resulting in a wine with a chewy, honeyed texture, refreshing salinity and a savoury, herbaceous tint. Chinese pear skin, sage stem, clementine oil & star anise with a crispy-creamy finish. Pair with fancy tinned fishes, salt and vinegar chips & fresh sourdough with an overindulgent swath of salty butter.

Xarel-lo, Catalunya, Spain | A stunningly fresh Mediterranean white made from the classic Cava grape, Xarel-lo! Made by Alta Alella, an entirely organic, family-owned winery near Barcelona, this all-season white occupies that textural sweet spot between crispy & fresh and broad & layered. Known locally as Pansa Blanca, rely on Xarel-lo to make dependably dry, utterly refreshing whites, often with a pointy, mineral-driven bent – guaranteed to please any crowd! Fermented in tank for fruit-forward freshness, think blushing apple, pear skin, fresh fennel, green almond & lemon zest with shiny, iridescent acid and a salty, slightly caramelized finish. Pair this perfect patio crusher with a buffet of your finest potato chips.

Garnacha Blanca & Macabeo, Catalunya, Spain | For an immaculate drinking experience, look no further than this plush, pretty & pristine white from Celler Gandesa, a century-old cooperative making wines in the southwest region of Terra Alta. Originally founded by over 400 partners, this Spanish cooperative delights in youthful, fresh-faced wines meant for real life. Farmed from 75-year-old vines and fermented in tank, expect an alluring depth & a Riesling-like profile of petrol, stony minerality and limeade fruit with a glossy, round finish. Notes of fuzzy peaches, overripe apricot, nectarine skin and canary melon mingle with the salty seaspray of the ocean and a glistening minerality that’ll have you coming back for more. Drink it all in darling, you booked a one-way and there’s no going back now!

Free pick up at our shop (1247 Dundas Street West) or delivery across Ontario in 2-5 business days for $10 - $20 flat rate depending on region. We offer free delivery for M postal codes over $150, and over $250 in the rest of Ontario.* Please note we do not deliver on Sundays.
