La Ginestra is a worker-owned and managed Tuscan farm spanning 130 hectares, with 7.5 under vine, and the rest home to roaming cows, 700 beehives, pigs, legumes and grains. Dario Nocci is both winemaker and part-owner who came from a conventional wine education background, but shed that restrictive skin in favour of creating wines that breathe with life. Named after a small farm next to the vineyard, the blend of tart, tropical-leaning trebbiano (80%) and floral, mineral malvasia toscana (10%) are whole-cluster, semi-carbonically macerated for six days to lift, then a small portion of direct-pressed sangiovese (10%) is added for a peck of acid.
