Winemaker and part-owner Dario Nocci works the farm’s 7.5 hectares of vines amidst their sprawling utopia of 130 hectares, which also house livestock, bees, legumes and grains. The sangio grapes are plucked from their vines on clay and alberese (limestone) and split into two tanks, one destemmed and seeing a short skin contact to pull tannin, but not bitterness, the other seeing six days of semi-carbonic maceration to bring their vision of an easy-drinking, but still clearly CHIANTI bottling to life!
