A striking hibiscus hue is achieved by leaving the grapes on skins for 12 hours before pressing off and fermenting with the addition of a pied de cuve made from estate chardonnay – think the winemaking equivalent of a sourdough starter being added to flour – in primarily stainless steel tanks (90%) and neutral oak (10%) for a suggestion of roundness.
