Certified organic since 2013, they use many biodynamic practices and an intentionally limited use of sulphur to let their terroir shine. These are bottles that only recently began coming into the province in teeeeny tiny quantities and we are so lucky to have them! From vines planted in classic marl and limestone and averaging 35-years-old, the grapes are pressed directly to barrel for fermentation, including creamy texture-giving malolactic. Throughout ageing, the barrels are kept fully topped up to prevent oxidation and present a fresh Jura offering.
