Patrick hunts down old vines from top notch growers, picks the fruit by hand himself, and works tirelessly to express the unique aspects of the Chablis region. The pinot noir grapes were hand-harvested in the town of Tonnerre, a few miles from Chablis, saw a quick maceration on the skins for this pomegranate-kissed colour, fermented in stainless steel tanks, and aged for nine months on the lees to plump before disgorging.
