Typically used for the production of balsamic vinegar, here grapes are destemmed, gently pressed and rested for nine months between steel tanks and cement to calm and collect. Their journey continues in a classic rifermentato style, with a secondary fermentation in bottle, triggered by the addition of unfermented grape must during the waxing moon.
