A small, family operation, their 3.5 hectare property on the sharp slopes above Bolzano, north-east Italy remains uncertified, but works steadfastly according to the principles of biodynamics. ‘Tonsur’ is a blend of 36 year-old aromatic, herbaceous müller thurgau (55%), plushy chardonnay, floral pinot bianco and mineral sylvaner (making up the remaining 45%). The grapes are 50% direct pressed and 50% macerated in whole clusters for a simple five hours before 12 months in barrel rounding out the ridges.
