This aromatic and expressive wine is always the result of a long skin maceration - 120 days for the 2020 vintage. Natural fermentation and aging in fiberglass. Bottled unfined and unfiltered, without any added sulphur.

Growing Cabernet Franc in the Eastern Townships is on the very edge of possibility, which in turn results in a most unique cuvée. Hyper-careful selection of the best bunches of Cabernet Franc: in 2019, less than 25% of the harvest was vinified, for a total production of 18 magnums and very few 750s (this is one of them)! Very brief maceration of one hour followed by a gentle pressing, fermentation and aging on fine lees in stainless steel tank. Bottled unfined and unfiltered, with a homeopathic dose of sulphur.

Natural sparkling wine of Gamay, pressed directly and fermented in stainless steel vats. Bottled before the end of fermentation, without fining or filtration. Disgorged “à la volée” with no added sulfur. With his immaculate white color, this light bubble that tend more towards a frizzante than a traditional method is all in freshness and splendor.

We always thought it possible and relevant to release a primeur wine in Québec, especially for this exceptional vintage. Harvested from mid-September to mid-October. Whole bunch fermentation for the Petite Perle, destemming and treading for the Marquette and Frontenac noir. Natural fermentation for all three, with blending on November 2nd and end of fermentation in the bottle. The wine is unracked, unfiltered, unfined and without added sulphur. Dangerously drinkable and slightly sparkling: serve chilled and drink as soon as possible!

90-day skin maceration, natural co-fermentation in vats then aged in 400L barrels. Bottled unfined and unfiltered, without any added sulphur. Traditional method (second fermentation in bottle) without dosage, then aging 12-month on lath and disgorged “à la volée” in May 2021.
