Their wines tend to feel like prehistoric creatures trapped in amber, perfectly preserved expressions of nature at its most feral. Armed with just a basket press and some old Dujac barrels, their wines are biodynamically farmed in the Black Forest (yes, literally from the Brothers Grimm) and are some of the most widely-coveted natural wines in the world. With 2-3 weeks on the skins, this is wildly aromatic and robust, packed with savoury spice, bitter almond, chamomile juicebox, overripe pears, preserved lemon, golden plum & marzipan with a slight funk & tannic structure. With a crunchy-meets-chalky limestone minerality & searing acid, think of this as an affectionate snarl from a terrifyingly real chimera.
