Florian Moll, half of cult natural wine produce Enderle & Moll, calls this Weissburgunder (also known as Pinot Blanc) “the finest, most elegant and most intense white wine we make” and that’s no joke! Their wines tend to feel like prehistoric creatures trapped in amber, perfectly preserved expressions of nature at its most feral. Armed with just a basket press and some old Dujac barrels, their wines are biodynamically farmed in the Black Forest (yes, literally from the Brothers Grimm) and are some of the most widely-coveted natural wines in the world. With 2-3 weeks on the skins, this is wildly aromatic and robust, packed with savoury spice, bitter almond, chamomile juicebox, overripe pears, preserved lemon, golden plum & marzipan with a slight funk & tannic structure. With a crunchy-meets-chalky limestone minerality & searing acid, think of this as an affectionate snarl from a terrifyingly real chimera.
