Ex Vero II ’17 hails from the mid-point of the slope, a blend of mostly Sauvignon Blanc with a splash of Chardonnay-adjacent Morillon, spontaneously fermented in old French, Croatian and Hungarian oak for 2 years with full malolactic conversion and extended aging on the lees. Full & robust, expect warm aromas of salt taffy, burnt caramel and struck flint, descending into green notes of fennel and green apple with yellow pear, green pineapple, lemonade citrus, wildflower aromatics, a crunchy, stony minerality & a smoked hay finish. We can imagine Marie Antoinette drinking this in her ‘faux peasant’ best & hanging out at the Petit Trianon to kiss hostlers in the stables, a seriously aristocratic romp in the hay!
Ex Vero II ’18 is a blend of about 65% Sauvignon Blanc and 35% Morillon (a biotype of Chardonnay) from 20 year old vines at the mid-point of the slope with an even distribution of clay and Opok. Spends two years on the lees with another in bottle & bottled without additional sulphur. Compared to the 2017 vintage, this is leaner, fresher and more mineral-driven with a flinty nose of wet rocks and pear skin, followed by tart green apple, watermelon rind, grilled pineapple, lime leaf, star anise & a hint of red liquorice. Crisp like Chablis and crunchy like Sancerre, this is sharp, angular and perfectly calibrated, a wine that shoots for the moon and lands squarely amongst the stars. <span class="Apple-converted-space"> </span>
