Fermented with natural yeasts, it spends nearly two years on lees in a mix of stainless tanks and concrete eggs gaining awe-inspiring texture, hence the Mise Tardive (late bottling) designation. The resulting wine has all of the deep mineral intensity and freshness one could ask for in Chablis, but with deeper layers of expressive ripe citrus and pear fruit, and salty complexity. Delicious now, for the patient, this wine will continue to gain complexity for 10+ years.
