Wine tasting notes at their best, create a shared language around how we experience flavour. But the traditional vocabulary can feel cool & limiting, and natural wine has expanded far beyond these borders. Terms like “gooseberry” (have you ever actually tasted one?) and “medium minus” don’t evoke the feeling of what's in the glass or make us particularly excited to drink it! What are the new ways to taste & how can we share the dynamic experience of each bottle?
