Tastes like how it feels to hear Dolores O’Riordan (of the Cranberries) sing Zombie for the first time, robust, deliberate & eerily of another time. Established in 1940, the family estate has been helmed by fourth generation winemaker Fabien Coche since 2005, making the 12ha of vines spread over Meursault, Pommard, Auxey-Duresses & Monthélie his playground. Preserving the natural health of the soil is a main objective, which has led to the use of organic farming techniques since 2017 (and an application for certification in 2020). A blend of chard from seven parcels of beautifully situated estate vines in northern Meursault, on a mineral life raft of clay & limestone soils that hold fast to their old vines. Whole bunch pressed then raised in a 3000 litre foudre, and bottled with no fining or filtration after a total of 16 months on lees. Texture and character punching wayyy above its weight. Warm white sand, white peach, key lime, straw stuffed mattress, fennel, salty butter tarts & gunpowder on toast. Serve alongside a gorgeous bowl of rice, with cured egg yolk, pickled seaweed & furikake.
