From the tiny village of Passy sur Marne, this sassy ‘lil Champagne from third-generation winemakers Martine and Pascal Serveaux drinks like an orchestral rendition of Flight of the Bumblebee across our tastebuds, bzz bzz’ing with texture and vibrancy. Richly golden-hued in the glass, this was fermented in stainless steel tanks and aged for 3 years on the lees. Think crisp apricot, lemon zest, freshly cut grass & bruised raspberries on the nose, balanced by creamy bubbles and a rich, luscious mouthfeel. A touch of flint and smoke imparts a slight mineral edge, while the combination of fresh acid and creamy bubbles lift both the wine and the spirit.
