Fermenting brothers Benoît and Sébastien Danjou took over the estate founded by their grandfather in 2000, developing more distinct cuvées & committing to expressing their unique terroir. Their position on lavish clay and limestone with galets roulés (rounded river rocks) ups the distinctive & balancing minerality of this warm weather friend. Macabeu is a classic Catalonian grape that is beyond comfortable in this toasty French region. These organic macabeu grapes are from 30-40 year old vines that were direct pressed before 10 months of aging. Honeysuckle, rosemary salt, white peach, spun honey cotton candy & crushed stones tightrope walking on a strand woven from acid and wax. Consume with a gigantic plate of your best friends famous paella recipe.
