Fidèle is their flagship cuvée, a texture-rich blanc de noirs with the slightest tint, deep spice & an expansive, chalky minerality. Unusually, these Champagnes are only aged for 20 months, instead of the usual 36 required for vintage designation – don’t get it twisted though, there’s no shortage of complexity here! Notes of cherry, candied ginger, preserved lemon, crabapple tart, grapefruit pulp, a fistful of green herbs & soaring acid, followed by a Running of the Bulls moment of toasted macadamia, high tide perlage, dirty shiitakes & a kiss of salted caramel. A stunning treatise to the promising future of Champagne, this is the rare sparkling worth a very careful decant – pair with lobster ravioli, corn cheesecake and the most beautiful stemware you own.
