Farmed from a number of plots, this is his benchmark cuvée, an opulent & pearlescent white with a judicious touch of honeyed sweetness. Crisp mountain air, white peach, elderflower cordial, white citrus, mother-of-pearl minerality, Cointreau-glazed custard & a striking, clairvoyant acid. Drinks beautifully over several days or weeks, especially with brown butter-soaked scallops.
