In the fields, mulch is reused from previous harvests to fertilize, while tiny shrimp are employed to gently aerate the soil – a harmonious collab with Mama Nature! FUN FACT! Delicate honeydew, lemon zester, tart pear skin, crystalline minerality, a rice umami roundness & summer savory blossoms caught in the wind. Enjoy alongside grilled asparagus and miso marinated fishies.
