Niida Honke is one of just two breweries in Japan who exclusively use Shizenmai, aka self-cultivated rice grown without fertilizers, pesticides or chemicals. In the fields, mulch is reused from previous harvests to fertilize, while tiny shrimp are employed to gently aerate the soil – a harmoni. . .

Odayaka means "calm" or "gentle" in Japanese! Made without added lactic acid, white koji – the kind used to make shochu! – is used to bring bright acid to the forefront of this tender sake. Delicate honeydew, lemon zester, tart pear skin, crystalline minerality, a rice umami roundness & summer savory blossoms caught in the wind. Enjoy alongside grilled asparagus and miso marinated fishies.
