If that isn’t wistful enough, Pheasant’s Tears is named after the Georgian story that only the best wines can move a pheasant to tears — why they were giving this incredible wine to pheasants, we’ll never know! Fermented and aged in traditional clay qvevri for 6 months, this full & oxidative skin-contact wine drinks like the underfoot crunch of multi-coloured autumn leaves — Silk Road dried apricots, nectarine pit, apple skin, assam tea tannins & dried sultanas with that classically Georgian green vegetal note. She’s got the beat even if she claps on 1 and 3.
