As iconic as Madonna and Jean Paul Gaultier’s history together. Founded in 1900, Cantillon was originally one of hundreds of breweries until it became Belgium’s only brewery in the 2000s, specializing in lambics – spontaneously fermented, aged beers made in open vats called coolships. The raspberries are from Serbia and the fruit is blended with 20 month old lambic, the proportion being 200 grams of fruit per litre of beer(!!). After soaking for two to three months, the lambic has extracted the pure colours, fragrances & flavours of the fresh raspberries. Next it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle – think pet-net! Ruby red onion skins in colour, rose hips, sharply sour, dark cherry, horse blanket, nostril-sticking fruity fragrance & a yeasty haze. All Cantillon products are age-able as all heck, in the case of this ‘rosé’ the brewery recommends drinking younger to really FeEL the fresh fruit’s dominance, and age longer for the lambic to take the upper hand (think funkier, brettanomyces, leather, barnyard & stinky cheese accents).
