The forward thinking Troon Vineyard is a certified biodynamic, regenerative organic farm in Southern Oregon’s Applegate Valley, surrounded by the Siskiyou Mountains. Here they grow botanicals (that also adorn their bottles) as part of their biodynamic practices that enliven their soils, vines & wines! Fermented outdoors, with 33% whole clusters to enhance the spice and peppery aromas and flavours (typical of Syrah) for 3-4 weeks before being pressed off into neutral oak to age for 18 months. A place where dreams come true, as the winemakers have written on their website, "The vines, the soil, the place, the wines, and the people are all becoming one”. Textured like crushed rocks, just ripe black plums, dried blackberries, cracked pepper & a savoury soul-shake. Pour alongside a Montreal-style smoked meat sandwich.
