Cabernet Franc, Loire, France
A high class wine that would sit neatly on any kitchen table. Winemakers and living legends, Catherine and Pierre bring us a classically tannic & red-fruit forward Bourgueil! A convivial and chummy Cab Franc, how fitting that when translated from German, ‘Trinch’ = ‘Cheers’! Fruit is harvested from young vines, with 18 days of maceration at low temperatures to extract gravely tannins & kindly aromas. Gravel clay and limestone soils contribute fine stripes of minerality across the palate. Slow smoked portobellos, cherry tree bark, peppery bog mint, wild blueberry tears, skipping stones, pomegranate stains & new leather jacket snagged by a bramble berry thicket. Some of the most traditional wines deserve traditional pairings, think Julia Child’s Boeuf Bourguignon or venture anew, into the BBQ smoked beef briskets of Texas.
