A RARE as rare can be time-travelling, vin jaune-esque pinot gris for all you curious and uncompromising connoisseurs out there. The Ontario allocation was three bottles, and we got two of them! Loyal farmers and tender sculptors of fermentation since their first foray into winemaking in 2013, we could not possibly adore the non-conformist wines of Anders and Anne more. ‘Aging a wildflower..’ is a relic oxidative wine from A & A’s first vintage. The pinot gris was slow pressed and fermented outside over the 2013 winter, transferred into old barrels in the spring of 2014 and aged over 10 years without topping-up to concentrate and intensify beyond comprehension. Lightning striking a river, arrowhead minerality, a bag of candy corn at your first fall fair & fresh dulse seaweed gives way into a supple white soy umami. Pour alongside singed s’mores, warm butter tarts or Nutella crepes.
