A fleshy, finessed and mineral flecked chablis. Montreal born, extensively experienced winemaker and lively Chablis force since 2008, Patrick Piuze hunts down old vines from top notch growers. Sourcing a good portion of sustainably farmed fruit, all of his bottlings are seizing at the unique aspects of the region, grape and year, and putting them on display for us. The chard is sourced from a 2.5 hectare vineyard from the village part of Chapelot, sitting opposite Blanchots. The soil is composed of Kimmeridgian (Jurassic period) limestone with a tad more clay content than other parts of Chablis. Sun warmed pear and blossoms, seagrass, cashew milk, quinine, wet seashells between stones, then nervy lime lightning strikes the same spot twice & curls of smoke appear. A fun chance to try your hand at a decant – swish ‘round in a mason jar, vintage vase or that family heirloom smoked glass decanter from the 80’s and pour slowly.
