A feverishly fruity, zero-zero German bubble for summer lovin’ of all kinds. Bianka and Daniel Schmitt are fourth generation winemakers working with biodynamic practices in the south of the Rheinhessen region of Germany. Together they manage the 16-hectare Demeter certified estate which has been in Daniel's family for over 200 years! For ‘FIZZ’, both the brambly dornfelder and spiced, floral portugieser are left whole cluster for pressing to extract as much of THEM as is possible, tannins, acids, phenols and all! The juice is then fermented and aged for six months before a secondary, three month long fermentation to create bursting bubbles. A sea of roses, shore-crashing bubbles, pomegranate juice, salmonberry pucker, blood orange popsicle, watermelon whites & tan lines. Enjoy with mint and Quebec strawberry pavlova or with your brown sugar sprinkled morning grapefruit, this is summer BABY!
