From their seven hectares of certified organic and biodynamic vines in Savennières, these 55-60 year-old vines grow on steep slopes of shale (schist) scattered with quarts on a warm(er) southern exposure. FUN FACT! This site has remained under vine since 1130 when it was planted by Cistercian monks – that’s a consecutive 892 vintages! 11 months in used oak barrels throws a lifeline to the mountainous acidity and tethers tactility. Concentration like the first molecule, Earth’s core tension, honeycomb, the full light spectrum, pear, toasted brioche, jasmine & discovering a new spice.
