A viscous, vivacious and viscerally balanced textured white for the ages - and INSTANT staff fave. First founded in 1981, Valli Unite today is a tight-knit group of 35 people working 100 certified organic hectares in Costa Vescovato, Piemont. Made from 10-20 year old timorasso vines – a regional white grape known for its aromatic-forward, thick-skins (meaning higher tannin when macerated) and age-worthy presence –, the grapes are left for one day of skin contact to pull just enough grip to firmly shake our tongues. The winery shared that 2022 was a hot vintage, which is reflected it the richly yellow colour of the wine. FUN FACT! From Roman origins, the name ‘Derthona’ is used by all the producers in the Tortona hills for their wines made from timorasso grapes! Kumquat coulis, beehive fastened to a tree branch, daffodils, warm pecan shortbread lactic edge, turmeric powder, lemon water & ice cubes. Pour alongside fried, veggie stuffed lumpia with sweet chilli dippin’ sauce.
