Ad Vinum is a new project from Sebastien Chatillon, a Parisian ex-sommelier who produces natural, terroir driven wines that are a little outside of the box. An incredibly unique wine of great complexity, blending the classic GSM trio with Ugni Blanc, a neutral French white grape most famously used in Cognac & Armagnac production. The whole motley crew is then aged in two white wine barrels used by Burgundian winemaker Frederic Cossard for his 1er Cru Puligny-Montrachet! The end result is a rustic, silky-smoky red, perfectly autumnal & crying out for a late night campfire hang featuring hoodies AND jackets.
