They are making truly unique wines, with the goal of using exclusively grapes grown by caring, like-minded farmers in Texas & New Mexico. A 50/50 blend of blossomy muscat and rich viognier, the fruit was destemmed and co-fermented for 48-hours with skins, plus it went through complete malolactic fermentation – giving it a gently lactic vibe. After aging for six months, this kindly cow-folk is all parmesan rind, jasmine green tea, yellow sour patch kidz & country musk. The winery suggest pairing with spicy vegetables dishes, falafels & hummus!
