Tomoko Kuriyama and Guillaume Bott, the wife and husband behind cult winery Chanterêves are natural wine superstars who have quickly made a name for themselves for their natural, terroir-driven takes on sometimes-stuffy Burgundy! This powerful Pinot Noir comes from Paris L’Hopital, a parcel with a uniquely dark, sandy granite in the Côte d’Or. As with all of Chanterêve's reds, the grapes are whole cluster fermented without mechanical pumpovers, while punch downs are done by feet, a light-handed approach to reflect the unique terroir. This wine goes into 228L old oak barrels and after two winters in their cold cellar, is bottled without fining or filtration. This ruby-hued beauty features lustrous, pithy red fruit with a structured woodsiness, oxblood lipstick on a wood grain dashboard, a deep, wintry earthiness and a savoury & sophisticated damp earth thing like an intentionally raw, unfinished edge. A sophisticated & intelligent wine to bring to your in-laws to be served alongside cozy, cold weather fare: kabocha squash, rutabaga, Savoy cabbage, schmaltzy vegetables & jus (not gravy).
