They’re finally here and they’re DELICIOUS! New to our Ontario market, young Bay Area négociant Brent Mayeaux (aka Stagiaire) works with vineyards that are baseline organic, or actively seeking thoughtful and regenerative practices. FUN FACT! Since 2018 he had been farming a few parcels of his own, before deciding in 2022 to focus his attention to winemaking and exclusively supporting local low-intervention farmers. 100% giving and spicy syrah from a plot planted by iconic pioneering viticulturist Phil Coturri in the ‘90s. The valley floor location is cooler, and brings more fog influence during cooler vintages - think lighter bodies, tartness & protection from sun and heat damage. A curated affair of 33% whole cluster, 33% destemmed & 33% direct-pressed grapes - poured over like milk onto cereal - and left for three weeks to stew. Purply-blue like a bruised shin, thin mints, sappy herbs, steak cooked rare & being convinced that hypnosis is real. Enjoy with an unhinged dining experience of Japanese-meets-Italian-meets-Brazilian, while some lovely Metallica-meets-Bach-meets-ABBA-meets-Snoop Dogg, plays sweetly in the background.
