Hard to describe but easy to enjoy, this dry, unfortified white wine from Ramiro Ibáñez is a deeply satisfying joy made out of Palomino, the grape typically used to make sherry, the famed fortified wine from Jerez. Here, Ibáñez is making it in the everyday style enjoyed by Jerezanos of the 19th century, embracing the savoury richness only Palomino can offer in a fresh, lower-alcohol package. Farmed from several plots of 80 to 90 year old Palomino vines, this was fermented and aged in old Manzanilla barrels for less than a year AKA meant for easy drinkin’ but especially with food. Fresh and alluring with next to no fruit, deep with slightly oxidative notes of marcona almond, meyer lemon curd, lemongrass, smokey flint & brown terracota. Drinking one will have you salivating for another, so buy two just in case.
