A shakin’, groovin’, bellbottomed wonder. These Sauvy B grapes were planted in the 1970s, on the organically-farmed Hillside Vineyard in Talmage (sitting right above the City of Ten Thousand Buddhas). The vines are head-trained (imagine a huge spider, legs up, laying on its back) and planted on mineral giving loam (a mix of sand, silt & clay) soils. ‘Disco’ is made up of two harvests, one was jucily, carbonically macerated giving Big Fruit Energy . The other went though a reverse saignée a fancy term that allowed them to reduce the ratio of skin to juice and reduce tannin extraction (more juicy fun!). A punch bowl of good times, orange zest cookies, dehydrated grapefruit, fresh guava, pineapple rings & papaya slivers! Drink when you need a little pep in your step & a little jazz in your hands.
