The Domaine's vines are planted on sandy-loamy limestone soil, and the surrounding vegetation is characterized with ‘wild scrubla. . .

Like being a chubby horse in a field of scrumptious grasses, simply delightful! The ‘Cavalier’ vineyard has been organic since 2006 with biodynamic practices being introduced in 2015. The Domaine's vines are planted on sandy-loamy limestone soil, and the surrounding vegetation is characterized with ‘wild scrubland’, plentiful with white oaks, holm oaks, salzmann pines and heather. Composed of 50% best-in-show Cabernet Sauvignon, 30% plummy Syrah & 20% supple Merlot. The fruit is fully destemmed, macerated for 3-4 days and aged in concrete vats to keep things cool, calm & collected. Crimson red, with clay pot, warm black plums, maraschino cherry, camphor & steadying minerality. Pour alongside watching Spirit: Stallion of the Cimarron (2002) narrated by Matt Damon & a definite watch for all us horse lovers out here.
