Like being a polar bear laying on an icecap watching the Northern lights, practically perfect in every way. An eight hectare operation first founded in 1895, the now father and son team of Gérard and Lilian Duplessis have a reputation for their “immortal”, age‐worthy wines and are an excellent reference for the greatness of Chablis. From 60 year old vines on the prestigious ‘Mountains’ 1er Cru, sitting pretty on the classic clay and limestone kimmeridgien soils of the region, cloaking the wine in its unrelenting mineral armour. Primary fermentation (including round n’ creamy malolactic) occurred in tank with local yeasts before 10‐12 months aging in tanks and a further six months aging in French oak barrels (10% new). Sparkling in terroir, white fruits, extract of slate, salty glacier, preserved fossils, manuka honey, blood lime oil & sea asparagus. Pour alongside muscles, oysters & scallops – SoMeTimES classic are classics for a reason.
