‘Modus Bibendi’ when translated from Latin means ‘way of drinking’, what is YOUR preferred way of drinking? Glass? straw? Boot? Bottle? ‘Elios' was born from the passion of two young Sicilian friends, Nicola and Guide, who joined together to develop their families’ farms and haul them to their full potential. Made from organic Grillo grapes grown in calcereous soils, located in the Southern area of Camporeale, near Palermo. Grillo is one of the most interesting regional Sicilian grapes, its name in Italian means ‘grasshopper’, which denotes the ‘hopping’ nature of the variety, which often does not ripen uniformly & is therefore harder to manage. Mediterranean maquis, lemon peel, matcha, peach blossoms, chalky minerality & pear tree. Pour alongside 9º, sunny December afternoons, what is winter anyways?
