A true STANDOUT from the Pearl lineup this year! This year's Flammerole is a blend of lush Ontario chardonnay (86%) with an unexpected and luxurious lift from zesty riesling (14%). Considered some of the best examples of fermented grapes Ontario has to offer, PM’s accolades extend further, with their own TWO michelin star destination restaurant, farm & bakery! Grapes from organic vineyards were carefully sorted and pressed whole-cluster before fermentation in a blend of concrete, & old oak for texture and stainless steel for freshness. Once bleneded, the fast friends spent an additional 12 months in concrete and old oak gaining complexity. Bergamot tea, wool wall hangings, lemon peel and grapefruit acidity, salted butter & bartlett galette. Enjoy with some smoked Ontario trout and an assortment of cheeses from serious Stratford treasure, Monforte Dairy. Just 160 cases produced.
