Altesse, Savoie, France
Just like an earthquake or Erin Brockovich, this wine is a force to be reckoned with. Now what do you get when you mix a disciplined and noninterventionist cellar approach, a historic estate (try 1640!) & picturesque, mountain vineyards? You get gorp-king Corentin Houillon. Since visiting the winery back in February 2023, we knew we were tasting something special, and that you needed to taste it too! The grapes for ‘Force’ are fermented separately based on soil before blending to a perfect balance of each including Jets: sandstone, marble, slate, limestone, Molasse: fine quartz sand, and Éboulis: limestone rocks from the Jurassic period sitting atop molasse! #Geology301 The aromatic and mineral altesse is aged on gross lees until bottling for a round, mouth-filling consistency. Sugar cookie reduction, frisky va, jasmine vines, salted fruit cocktail, fresh marshmallow root, dino egg oatmeal, buttered honey bun & textured like tobogganing in candy land, but your tongue is the sled…and the snow is clotted cream. Enjoy with bunny slippers, satin robe or skimpy pj set & a mud mask – every FON (force of nature) needs downtime too.
Gamay, Savoie, France
For lovers of tentless sleeping under the stars & freeze dried moon cheese packets. Fresh to Ontario, Corentin Houillon is the gorp king of Savoie, slingin’ exceptional zero-zero wines that feel like a crossover of alpine and rhone profiles. With a family full of historic winemaking knowledge, you could say he was born into it, but through dedication and experience (try, working for Pierre Overnoy, Stéphane Tissot & Dominique Derain), came to develop his own voice and point of view. The substantial gamay is grown on lower slopes of ‘jet’ soils (primarily sandstone, marble, slate & limestone), picked by hand and left on the skins for 21 days (with 40% whole bunches), to pull rough n’ rowdy tannins that show up at just the right moment. Lung full of forest air, dusty raspberry, spiced cherry preserves, crumbling castle minerality, soft wood, finishing with bloody tannins & elk sticks. Enjoy with wild hare terrine spread across divot-adorned saltines.
Altesse, Jacquère, Savoie, France
Quietly confident, demure, & delicious delirium are a few words we would use to review this wine if it were a broadway play and we were NY critics. For the first time in Ontario, Corentin Houillon’s zero-zero bottles of pure alpine bliss are here to knock your extreme-hiking boots off, just like they did ours back in February of 2023 when we visited his serene property. Fermenting away in Chautagne, a small Jurassic valley in the northern Savoie mountains, Corentin’s wines are about precision, terroir & pristine farming. FUN FACT! Veronnet is the old name of the estate, this wine meant to be a liquid summary of what they’re all about. This electric blend of local varieties includes (60%) fragrant altesse to (40%) mineral-driven jacquère, aged on lees in concrete to build texture and plot. Mountain spring water, aniseed, tigernut-milk, lithe white peach, the sensation of a sugar cube melting on your tongue, thinned lemon cordial, mild herbs & a creeping crescendo of acidity. Enjoy with an herb-packed wild mushroom galette.
Altesse, Jacquère, Savoie, France
An incredibly hype and special wine here for the first time! If you google baby names, Zenith means, "the point in the sky directly above an observer”, we recommend you keep this in mind for future children - be they human, animal or plant! In the meantime, meet this version, from Corentin Huillon, a young talent from a family full of the most famous natural winemakers in the world. His wine resume stretches from Switzerland throughout France, with incredible stints alongside legendary winemakers like Pierre Overnoy, Stéphane Tissot, Dominique Derain & Domaine de la Ville. ‘Zenith’ is a complex, stunningly textured and welcoming orange, aka a superb intro for newcomers & die-hards alike. The prestigious and plush altesse and mouthwateringly crisp jacquère spend 21 days on skins, offering up a delicately interlaced and enveloping tannin structure. Crushed rockets, gentian root, supple mineral tension, ginger water, rubbery roots wound into a tiara, salted rim & a lemon drop. We can see this paired with just about anything, vegetable tagine to fried alligator.
