A complex, spiced and richly textured Slovenian skin contact shining star. Fourth generation winemaker Aleks and wife Simona farm six hectares of organic and biodynamic vines alongside their beloved olive trees, sheep and pigs (the latter of which they cure and serve at their restaurant!). Located on the hills of Medana, where we find clay-limestone soils rich in mineral salts and marine fossils. FUN FACT! Pinot gris, also known here as sivi pinot or grauburgunder, is known for its flecked, almost watercoloured melange of colour to it’s skins. This inspired the cuvée name; after fermenting on it’s multi-hued skins, the wine took on the colour of a robin or “Gardelin" in Slovenian! Four days of skin contact extracts everything we want and need, and is followed by one year in 500 L acacia barrels, a second year in 2000 L acacia barrels, and a third year in stainless steel tanks – the end expression is nuanced and ripe with life. Wooden chest, orange bitters, creamed honey, sharpening a knife with a stone, vanilla flower, clove, persimmon & a mushroomy patch in the forest.
