Made from two old vine parcels of Romorontin, the grapes are intentionally left on the vines for higher maturities than the rest of the estate. Bottled after 24 months of élevage without racking or filtration, we feel like this is a really great choice for autumn fanatics who make a big deal out of complaining about summer and talking about how much they love layering. It has a bit of an autumn-in-a-glass vibe, like a class trip to an apple farm —  baked apple & apple cider balanced out by a tense minerality, lightly floral acacia, fresh green grass & mint. Delicious with any sort of brown butter-driven entrée: mackerel, mushroom risotto or both!
