Four longtime friends, Pierre-Edouard Perron, Simon Rooney, Charles Lapointe and Gabriel Boutin produce natural, living & seriously thirst-quenching ciders. Every handcrafted beverage is either made exclusively from apples (often recovering apples that would usually be thrown away) OR co-fermented with other fruits like pears, plums and cranberries. Here we taste a bounding cider, co-fermented on luxe chardonnay and vibrant vidal skins for 30 days – this brings crisp structure, and blending with 20% blue bells plum cider introduces a new layer of aromatic potential. So fresh, so clean & spotted with tannins. Enjoy with cured meats, spreadable vegan cheeses & afternoon temperature highs.
