Sake is powerfully influenced by water and rice. Here both shine bright. Saijo, the brewery's village is famous for its pure water along and cool brewing conditions, creating dry sake with unique depth of flavour. Rice was polished to 92% of its original size and brewed unfiltered and unpasturized keeping flavour in. Toffee, barley and a brisk run through the woods with a long, flavourful, cantaloup finish.
