A uniquely zero-zero, dry and salty Alsatian riesling produced in a complexity-giving solera system. Phillipe Brand and his father partnered together to work their family’s vineyards with an organic (certified in 2001) and biodynamic (certified in 2015) philosophy, immense knowledge of the land and respect for microorganisms. Thanks to their practices they say, “the roots of this grape variety can go down to more than 10 meters deep and capture trace elements and mineral salts from the parent rock” #YUM A blend of several vintages this wine is made in a solera system, with a blend of older wine kept every year to add to the newest harvest. FUN FACT: this is how many of the best Champagnes (plus sherries!) are also made! Grapes are slowly pressed, fermented and aged for 36 months allll together to add dense complexity, older vintages adding depth, while the newer grapes add fresh perspectives. Honeysuckle, bowl of citrus zest, fleur de sel, right off the bush rose hips, acacia juice & never-ending structured minerality. Pour alongside your monthly still life painting sesh.
