‘Tête à toto’ is a common French children's game, so much so that Toto has become a ubiquitous character of sorts in French culture ~ just look at that face, how AdORaBLe! Babass and fellow natural winemaker Patrick Desplats founded Domaine des Griottes in 2000 and really kickstarted the movement towards zero-zero winemaking. Today, Babass and his partner Agnès work roughly 4.2 hectares of vines, from several sites neighbouring one another, in Rochefort-sur-Loire (located in middle-Loire). This is their first time purchasing fruit as poor weather struck their area in 2021. A blend of two local Loire grapes, the acid-forward grolleau (80%) and green-brambly cab franc (20%). Whole bunch maceration for 10-15 days with a slow pressing – giving a balanced final blend of less extracted free-run juice and more tannic macerated juice. Leafy, cranberry candy, many flowers - heavy on the violets, sour cherry, droplets of minerality, making your own clove cigarettes, acidity wraps your tongue in an origami crane, glossy blackberry & strawberry-tree-fruit (look them up!). Pour alongside seared beef hearts & internet sleuthing to find any insight into Babass’ musical career.

For Toronto Orders (M Postal Code) that are placed before 8 pm will arrive within 1 to 2 days. Our courier delivers between 12 - 5pm Mon-Fri and sends tracking. We do not offer same day delivery on Fridays.
